Overview
This dessert wine is obtained from the shrivelled “recie” (“ears” in the veronese dialect) of the best Garganega grapes-i.e., the top part of each bunch, with the ripest and best exposed berries. After picking, the grapes are dried on straw mats for approximately five months. The grapes must not be too densely packed on the bunches to allow air to circulate well.
