Overview
Grappa is the most ancient and traditional distillate of Northern Italy, obtained by distilling the solid parts of grape pomace. Monovitigno means one varietal. This grappa is obtained from a masterful blend of Monovitigno (single varietal) grapes of Moscato, Ribolla Gialla and Verduzzo Friulano. Fermentation is done in stainless steel tanks. Distillation is discontinuous with both head and tail cut off, performed in steam stills. Distillation is slow to allow evaporation and condensation of the volatile components which are responsible for the olfactory characteristics of the grappa. The Moscato ,Ribolla Gialla and Verduzzo grappa, prior to be bottled, rest for 6 months and are then blended to become a cuvée.
