Overview

Cerretta has warm south-west exposure, at 350-370 meters above sea level. The Cerretta and Prapò vineyards are right next to each other, but the difference between the two wines is striking; Cerretta is more structured, shows the Serralunga dark chocolate character. Ages superbly.

Fermented with the skins for 25-30 days, with daily pumpovers to extract color and tannins

2 years in untoasted 700 later barrels 18 months in bottle before release

Intense garnet red, with faint orange glints
| Aroma
Ripe fruit and vanilla, which after a few years in the bottle evolve into leather, tobacco, and dark chocolate, still redolent of berries
| Taste
Full on the palate, with solid tannins (rounded out by aging in smaller barrels) that leave the mouth clean; the finish is long and intense.

With flavorful main courses, game, or aged cheeses. Perfect after dinner as a ‘meditation wine’ with nuts and cheese
